
I used to enjoy cooking. I'd buy a Gourmet or a Bon Appetit magazine, pick out a few recipes, and have a really nice, elaborate experimental dinner. Damn the calories, I'd still make it, butter and all...
Times, they are a-changin'.
- I am trying to lose weight (as always).
- I don't have time to deal with the elaborate recipes these magazines offer.
- Thing1 and Thing2 don't always enjoy spicy/hot/exotic foods.
So, I'm down to the basics-- foods that are easy to make, made with known ingredients, can be cooked in about 2 hours or less, and appeal to the masses. *sigh* As I have been wont to say, "Oh, how the mighty have fallen."
I will now offer you all an easy, yet bizarre recipe that was given to me by Ms. Lowe's --my next-door neighbor who's obsessed with lawncare. I didn't know what was in it when she gave me a sample, but it was DELICIOUS. We made it during the hurricane and it was spot-on great. When I saw the recipe, I couldn't believe the actual ingredients. Here it is:
Hurricane Soup
1 lb cooked, ground beef
3 15 oz cans black beans (drained and rinsed)
3 cans Minestrone soup
3 10 oz cans diced tomatoes with green chiles
Combine all. Heat. Top with lots of shredded cheese -- cheddar,
jack, whatever. Serve with French bread.This recipe is better if it sits for a day or so in the refrigerator.
Comes up in flavor. It does not freeze well because the pasta in the soup
gets mushy. Seriously awesome!
Now I'm asking... does anyone have simple, easy to make recipes that they're willing to share? (No saffron, pig's feet, or entrails in the ingredients, please. Keep it appealing to the masses.)

You want simple? You want satisfying? Here you go! Take a can of your favorite cream of whatever soup, cook according to the directions, stir in 1 cup of instant rice, let stand for 10 minutes, stir again, serve and enjoy. Or how about this. Take 3 cans of chicken broth, add all the chopped vegetables and noodles you like and bring to a slow boil. While that is going chop up and grill some chicken breasts. Mix it all together and enjoy some serious chicken noodle soup.

He's not kidding about the instant rice in the cream soup thing--it really is good. I like it with cream of chicken/mushroom. yummy!
Two Entries from the "What the Hell is in That?" category --
First is a dessert (of course) that my mom makes:
EASY YET TASTY FRUIT THING
1 can of fruit filling
1 box of white or yellow cake mix
1 C. of butter/margerine
Take a casserole dish, dump fruit filling in it, then cover with the dry cake mix. Melt the butter and pour over the top - stir it up just a bit. Cook at some sort of heat until it's bubbly. Awesome. I like to add walnuts or pecans when I add the cake mix.
This second thing sounds really bizarre but tastes REALLY GOOD - you just have to trust and try them once. I have no idea why these are called Irish Malts as they are nothing like Scotch. More like big fatty pancakes.
IRISH MALTS (basic equivs for ingredients, this will make about 1 serving)
1 C. flour
1 C. water
1 egg
Pinch of salt
Take the stuff in that list and mix it up, but not too much. You want bits of egg to be not mixed in all the way. You heat up a skillet, and then dump this all in the hot skillet. Don't worry if it's all clumpy when you pour the batter in - it tastes nice that way. After awhile flip it over - it's going to be this really dense huge pancake like thing.
Slap it on a plate, sprinkle with fresh lemon juice and dust some powdered sugar on the top - Viola! My mom and sister like to put syrup on theirs, but I like mine with a lot of lemon juice and the sugar. Tastes like a cross between a warm biscuit and an omlette.
Even the kids will like this one as it isn't really as spicy as it sounds. Dad's Nachos,
In a cake pans spread about a half inch layer of refried beans, add a layer of ground beef browned with one envelope taco seasoning. The next layer is shredded cheeses of your choice, I use cheddar and the Mexican mix from Kraft. Optional top layer is either or both, sliced black olives and non spicy green chili's. Cover with foil and bake at 250-300 for an hour or until cheese is melted and beans are hot, eat as a dip with totilla chips, Very filling, easy and quik to make/
